Steamed mussels are one of the chef recipes at home that most people would love to try, but are afraid of screwing up. In truth, this is probably one of the easiest recipes that you’ll ever make. It takes very few ingredients, and you likely have most of them sitting around the house. The main ingredient can be found at your local grocery store in the seafood department pretty much year-round, so it can’t hurt to venture out and give it a go.
There are many ways to make mussels with a tomato base, but if you’re if you’re looking to head to the Mediterranean seaside, this is one of the chef recipes at home that will take you there. This recipe yields a rich and satisfying tomato-wine sauce that’s perfect for dipping crusty bread, so be sure to pick up a loaf to complete the meal.
2 tbsp. butter
1 onion, chopped
3 cloves garlic, minced
1 15-oz. can diced tomatoes
1/2 c. dry white wine
2 tbsp. freshly chopped parsley, plus more for garnish
Freshly ground black pepper
2 lb. mussels, scrubbed and de-bearded
Grilled bread, for serving
-In a pot over medium-low heat, melt the butter. Add the chopped onion and cook until fragrant and soft, about 5 minutes.
-Add the garlic and cook until fragrant, about 1 minute more. Be careful not to let the garlic burn or else it will become bitter.
-Add the diced tomatoes, wine, and parsley and stir until combined. Season with salt and pepper to taste.
-Add the mussels and simmer until all shells are open. It is important that you discard any shells that do not open.
-Garnish with more parsley and serve with grilled bread.
