Asian Dan Dan Noodles    Method of Preparation
1.     For the noodles: In a large sauce pot, bring water to a boil and cook noodles as instructed.

2.     For the beef: In a large skillet over MEDIUM-HIGH heat, add sesame oil and beef. Crumble and cook beef until browned throughout.

3.     Once beef is cooked, add chili sauce, soy sauce and rice vinegar. Cook until mixture has slightly thickened- about 3 minutes.

4.     For the bok choy: Steam or sauté the greens until tender.

5.     To serve: Divide noodles evenly amongst each bowl and top with the garlic chili-beef mixture, box choy, nuts and chilis. Serve immediately.


Bourbon Glazed Lamb Chops   Method of Preparation
1.     For the lamb: Cut into chops and season with salt and pepper.

2.     Preheat a large non-stick skillet over HIGH heat and add vegetable oil.

3.     Cook chops to your desired doneness- about 5-7 minutes for medium.

4.     For the glaze: In a medium sized sauce pot, combine bourbon, brown sugar and soy sauce. Bring to a simmer and cook until reduced- about 10 minutes. Turn down heat if the mixture begins to boil over.

5.     To serve (as an appetizer): Brush chops with bourbon glaze and serve immediately.

6.     To serve (as a meal): Brush chops with glaze and place atop mashed potatoes and winter vegetables.


Instant Pot Lamb Shoulder Stew
  Method of Preparation
1.     For the chops: season with salt and pepper.

2.     To cook: Using the SEAR setting on the Instant Pot, sear two to three chops at a time, with a drizzle of vegetable oil, until golden on each side.

3.     Once all chops have been seared, place them all into the Instant Pot with the remaining ingredients, except the fresh thyme.

4.     Press the soup/stew button OR cook manually for 35 minutes.

5.     When the cooking cycle ends, let the pot naturally release the pressure for 15 minutes.

6.     To serve: Stir the soup, remove bones and serve immediately.


Instant Pot Braised Gyro-Style Lamb Shoulder Chops   Method of Preparation
1.     For the lamb: In a small bowl combine cumin, garlic powder, oregano, thyme, cinnamon and salt. Mix until combined and rub over all of the shoulder chops.

2.     To cook: Using the SEAR setting on the Instant Pot, sear two to three chops at a time, with a drizzle of vegetable oil, until golden on each side.

3.     Once all chops have been seared, place them all into the Instant Pot with the vegetable stock. Cook for 35 minutes at HIGH pressure or until chops are tender and falling off of the bone.

4.     To serve: Place braised lamb atop tzatziki sauce with crispy potatoes, giardiniera and top with pickled red onions.


 Reverse Seared Lemon Pepper Ribeye   Method of Preparation
1.     Preheat oven to 225 degrees

2.     For the roast: Remove roast from the refrigerator and allow to come to room temperature- about 2 hours.

3.     Next, season the roast generously with lemon pepper seasoning and place in oven for 1 ½ - 2 hours or until the internal temperature reaches 130F.

4.     Remove roast from the oven and increase the oven temperature to 525F degrees.

5.     Place roast back in the oven and roast until deep brown and crisp- about 8 minutes.

6.     To serve: Squeeze fresh lemon juice over the cooked roast, slice and serve with your favorite side dish.


 Easy Oven BBQ Leg of Lamb   Method of Preparation
1.     Preheat oven to 425F

2.     For the lamb: Remove netting, trim off excess fat and cut to lay flat on a baking sheet lined with parchment paper or aluminum foil.

3.     Rub lamb with your favorite BBQ rub and place in the oven, along with the winter vegetables.

4.     Roast the lamb, uncovered, for 35-45 minutes or until an instant-read thermometer registers 135F. Remove from oven and allow to rest 10-15 minutes before carving.

5.     To serve: Brush the butterflied lamb with your favorite BBQ sauce, slice and place atop mashed potatoes and roasted vegetables.


  Winter Herbed Strip Roast
Method of Preparation
1.     Preheat oven to 425F.

2.     For the roast: Chop herbs and rub onto the strip roast along with a generous amount of salt and pepper. Place onto a baking sheet lined with parchment paper or aluminum foil with the leeks and mushrooms.

3.     Place in the oven until the internal temperature reaches 135F- about 35-45 minutes.

4.     Once desired temperature is reached, remove from oven and allow to rest for 10-15 minutes before slicing.

5.     For the gnocchi: In a large sauté pan over MEDIUM-HIGH heat, add butter and cook gnocchi until golden brown.

6.     To serve: Slice roast into steaks and place atop gnocchi, mushrooms and leeks. Drizzle with pan drippings and serve immediately.
